After completing her Bachelor of Pharmacy (B.Pharm) degree in 1978, she continued her academic pursuit, obtaining her Master of Pharmacy (M.Pharm) degree in 1980 and her Doctor of Philosophy (Ph.D.) degree in pharmacology in 1985. Keen to delve deeper into her field, she undertook a post-doctoral fellowship in ethnopharmacology at the prestigious University of London in 1989.
Akunyili started her career as a hospital pharmacist at the University of Nigeria Teaching Hospital in Enugu State. In 1981, her commitment to education led her back to her alma mater, where she became a Graduate Assistant in the Department of Pharmaceutical Sciences. With time, she progressed to becoming a Senior Lecturer in 1990. She was appointed a Consultant Pharmacologist at the College of Medicine in 1996.
